VIEW HealthBit CXXXII: AG Turkey and White Bean Italian Chili

(N.B. Organic, free range and non-GMO ingredients always recommended)

Ingredients

1 cup chicken bone broth or stock
1 package ground turkey (16oz)
1 jar Bruschetta (12oz)
1 can cannellini beans (15 oz)
½ cup quinoa
¼ cup onion (chopped)
¼ cup pepper (chopped)
2 cloves garlic
2 tbsp olive oil
1 tsp chili powder

Directions

  1. Brown garlic in oil
  2. Sauté onion and pepper over medium heat for five minutes Or until tender
  3. Add chopped meat and brown it, stirring occasionally so all parts brown
  4. Add broth, bruschetta, cannellini beans and chili powder
  5. Cook about five minutes, stirring occasionally
  6. Add quinoa and raise heat to a quick boil
  7. Reduce heat to simmer and cover to cook for about 15 minutes
  8. If the quinoa is not fully cooked after 15 minutes, cook another five
  9. Serve with hot sauce and/or cheese depending on preferences
  10. Enjoy!

It also tastes great cold the following day
