Ingredients
1 pound cooked shrimp
1 cup cooked corn
1 large pepper, chopped
1 small onion, chopped
3 tbsp olive oil
2 cloves garlic, finely chopped
2 tbsp chopped fresh cilantro
1 tsp paprika
1 tsp black pepper
½ tsp himalayan crystal salt (or more to taste)
Directions
- Over medium heat, lightly brown garlic in 2 tbsp olive oil in a large skillet
- Add chopped onion and peppers, saute for 5 minutes
- Add herbs and spices
- Cover and simmer on low for 10 minutes, stirring occasionally
- Add shrimp, corn and additional tbsp of olive oil
- Saute over medium heat for five more minutes, or until heated through
- Serve as is, with rice, quinoa or pasta or in a tortilla
