Ingredients:
- ½ cup organic pumpkin puree
- ½ small banana (or ¼ large)
- ½ cup frozen spinach (or 1 cup fresh spinach)
- 1 cup water (or more for thinning)
- ½ cup unsweetened almond or coconut milk
- 1 tbsp almond butter or sunflower seed butter
- 1 tbsp cinnamon
- 1 heaping tbsp chia seeds
- 1 tsp raw honey (local preferable)
- ¼ tsp nutmeg (optional)
- 1 scoop plant based protein powder (I use Metagenics UltraClear Plus or Vega)
- Ice (about ½ cup recommended)
Directions:
- Combine all ingredients in a blender of your choosing (I like Vitamix), starting on a lower setting and slowly moving to top speed
- Add ice a few cubes at a time until desired consistency is met
- Pour and enjoy in one sitting, preferably as breakfast replacement
