VIEW HealthBit XLIV: Easy Kale Chips

Ingredients:

2 cups chopped Kale

1-2 tbsp Olive Oil

Himalayan crystal salt

Black Pepper

(other herbs and spices can be used as well)


Directions:

  1. Preheat Oven to 375 degrees
  2. Rip kale into bite size pieces, leaving stems aside (or buy a bag of pre-chopped kale)
  3. Coat a cookie sheet with olive oil (olive oil spray makes this easier)
  4. Spread kale onto cookie sheet in a single layer
  5. Drizzle 1 tbsp olive oil onto kale
  6. Sprinkle with Himalayan crystal salt and/or pepper to taste
  7. With clean hands, rub oil, salt and pepper into the kale so that it’s coated, but not dripping (the additional tbsp of olive oil may be needed to accomplish this)
  8. Bake for ~12 min
  9. Transfer to a bowl 
  10. Enjoy!

NB: there is a fine line between when kale is perfectly crispy and burnt to a crisp so after 10 min check frequently; they are done when they are crunchy not soggy (but if they go too long they will taste like burnt popcorn!
