Ingredients:
2 cups chopped Kale
1-2 tbsp Olive Oil
Himalayan crystal salt
Black Pepper
(other herbs and spices can be used as well)
Directions:
- Preheat Oven to 375 degrees
- Rip kale into bite size pieces, leaving stems aside (or buy a bag of pre-chopped kale)
- Coat a cookie sheet with olive oil (olive oil spray makes this easier)
- Spread kale onto cookie sheet in a single layer
- Drizzle 1 tbsp olive oil onto kale
- Sprinkle with Himalayan crystal salt and/or pepper to taste
- With clean hands, rub oil, salt and pepper into the kale so that it’s coated, but not dripping (the additional tbsp of olive oil may be needed to accomplish this)
- Bake for ~12 min
- Transfer to a bowl
- Enjoy!
NB: there is a fine line between when kale is perfectly crispy and burnt to a crisp so after 10 min check frequently; they are done when they are crunchy not soggy (but if they go too long they will taste like burnt popcorn!
