Grandma G’s Zucchini Squares
Ingredients
- 5 eggs, lightly beaten (organic cage free eggs preferable; I do 3 whole eggs and 4 whites)
- ½ cup olive oil
- ½ cup grated Pecorino Romano cheese
- 2 cups Bisquick (I use gluten free*)
- ¼ tsp garlic powder
- ½ cup finely chopped yellow onion
- 3 cups zucchini (thinly sliced)
- Salt and pepper to taste (Himalayan crystal salt preferable)
*When using gluten free Bisquick, one-two additional egg whites are helpful since it is a bit drier than the original
Directions
- Preheat oven to 350 degrees F. Spray a 9×13 pan with olive oil spray and set aside.
- In a large bowl whisk together the eggs, oil, cheese, and garlic powder. Whisk in the Bisquick. Add the onion. Gently stir in the sliced zucchini, being careful not to break up the slices. Smooth the mixture into the pan.
- Bake until puffed and golden brown, about 40 minutes (or until a toothpick inserted in the middle comes out clean). Let cool at least 15 minutes before serving.
(Side Note: She used to add mozzarella as well but I stopped to limit the amount of dairy and have had no complaints.)
