(N.B. Organic, free range and non-GMO ingredients always recommended)
Ingredients
1 cup chicken bone broth or stock
1 package ground turkey (16oz)
1 jar Bruschetta (12oz)
1 can cannellini beans (15 oz)
½ cup quinoa
¼ cup onion (chopped)
¼ cup pepper (chopped)
2 cloves garlic
2 tbsp olive oil
1 tsp chili powder
Directions
- Brown garlic in oil
- Sauté onion and pepper over medium heat for five minutes Or until tender
- Add chopped meat and brown it, stirring occasionally so all parts brown
- Add broth, bruschetta, cannellini beans and chili powder
- Cook about five minutes, stirring occasionally
- Add quinoa and raise heat to a quick boil
- Reduce heat to simmer and cover to cook for about 15 minutes
- If the quinoa is not fully cooked after 15 minutes, cook another five
- Serve with hot sauce and/or cheese depending on preferences
- Enjoy!
