Email #4: AG GF Banana Nut Muffins
In the hopes of limiting waste during this time, I figured it was the perfect opportunity to share this simple, satisfying and healthy recipe with you. Enjoy!
Preheat Oven to 350 degrees Fahrenheit
(N.B. Organic, non-GMO, cage free ingredients always recommended)
Ingredients
3 ripe bananas
2 eggs
2 cups gluten free flour (I prefer almond flour)
½ cup unsweetened apple sauce
1 tsp baking soda
½ cup walnuts, chopped
½ cup semi-sweet morsels (optional)
Directions
- Lightly coat a muffin tin with olive or coconut oil spray
- In a mixing bowl, beat eggs
- Add banana and mash into the eggs
- Mix in dry ingredients and stir well
- Add nuts and optional chocolate chips
- Gently stir
- Pour batter into muffin tin
- Bake for 20min
- Let sit at least 10min
- Enjoy!
