VIEW HealthBi CXXVIII: AG Garlic Cauliflower Smash
(N.B. Organic, free range and non-GMO ingredients always recommended)
Ingredients
1 head cauliflower, chopped
2 tbsp olive or avocado oil
2 cloves garlic
1 cup water
½ cup non-dairy milk
2 tbsp butter
1 tbsp Garlic powder (or more to taste)
½ tsp Himalayan crystal salt (or more to taste)
¼ tsp black pepper (or more to taste)
Directions
- In a medium-sized saucepan pot, lightly brown garlic in oil
- Add chopped cauliflower and water
- Bring to a boil then cover and simmer for 20 minutes or until very tender
- Turn off heat and add the rest of the ingredients
- Place an immersion blender in the pot or transfer to a blender
- Blend until creamy
- Season with more garlic, salt and pepper as needed
- Serve and enjoy
