This is special Trader Joe’s Recipe, concocted from five of my favorite items from the store
Ingredients
1 bag Trader Joe’s Cauliflower Gnocchi (frozen)
1 bag Trader Joe’s Artichoke Hearts (frozen)
1 ½ cups Trader Joe’s Organic Butternut Squash Soup (low sodium)
2 cubes Dorat frozen, crushed garlic
½ cup chopped onion
2 tbsp olive oil
¼ tsp Himalayan crystal salt (or more to taste)
¼ tsp black pepper (or more to taste)
Grated Pecorino Romano (optional garnish)
Directions
- In a medium-large pot, over medium heat, saute 2 cubes of garlic in 2 tbsp olive oil
- Add the onion and stir to coat
- Reduce heat to low, cover and caramelize onions for 5 minutes, stirring occasionally
- Add in artichoke hearts and stir to coat
- Pour in 1 cup of the butternut squash soup
- Add in salt and pepper and mix well
- Cover and cook for 10 minutes over medium heat, stirring occasionally
- Add in cauliflower gnocchi and the other ½ cup of soup and stir to coat
- Cover and cook an additional 10 minutes, stirring occasionally
- Serve with a smile and optional Pecorino Romano garnish
