VIEW HealthBit CXVIII: AG Crunchy Almond Energy Balls

Ingredients
1½ cups old-fashioned oats (gluten free preferable)
½ cup almond meal
⅓ cup natural crunchy almond butter (heaping)
¼ cup raw honey (preferably local)
¼ cup mini semi-sweet chocolate chips

Directions

  1. Line brownie pan (9’x9’ or 8’x8’ pan) with parchment paper for easy clean-up
  2. Combine five ingredients in a bowl
  3. Roll dough into balls about 1 inch in diameter (dough will be sticky)
  4. Place energy balls in pan (makes about a dozen)
  5. Put pan in freezer for at least 1 hour
  6. Remove from freezer and enjoy
  7. Keep energy balls in an air-tight container in freezer when not being consumed
