VIEW HealthBit CVII: AG GF Pumpkin Pecan Muffins
Preheat oven to 350 degrees
Ingredients
2 cage free eggs
1 cup organic pumpkin
1 ¾ cups gluten free flour
¼ cup virgin olive oil
¼ cup organic coconut sugar
1 tsp baking powder
1 tsp cinnamon
½ cup chopped pecans
½ cup semi-sweet morsels (optional)
Directions
- With a fork, beat eggs in a mixing bowl
- Beat oil into mixture
- Mix in pumpkin
- Add in all dry ingredients and stir well
- Add pecans and chocolate morsels (optional)
- Pour evenly into muffin tin
- Bake for 30 minutes
- Cool for 5 minutes
- Enjoy!
- Store the rest in an airtight container
