VIEW HealthBit XCVIII: AG End of Summer Shrimp Saute

Ingredients

1 pound cooked shrimp

1 cup cooked corn

1 large pepper, chopped

1 small onion, chopped

3 tbsp olive oil

2 cloves garlic, finely chopped

2 tbsp chopped fresh cilantro

1 tsp paprika

1 tsp black pepper

½ tsp himalayan crystal salt (or more to taste)

Directions

  1. Over medium heat, lightly brown garlic in 2 tbsp olive oil in a large skillet
  2. Add chopped onion and peppers, saute for 5 minutes 
  3. Add herbs and spices
  4. Cover and simmer on low for 10 minutes, stirring occasionally
  5. Add shrimp, corn and additional tbsp of olive oil
  6. Saute over medium heat for five more minutes, or until heated through
  7. Serve as is, with rice, quinoa or pasta or in a tortilla
