Ingredients
4 cage free whole eggs
4 cage free egg whites
2 cups fresh chopped spinach (or 1 cup frozen)
2 cloves garlic
2 tbsp coconut milk
2 tbsp chopped goat’s milk gouda cheese
1 tbsp ghee
½ tsp paprika
½ tsp black pepper
½ tsp Himalayan crystal salt
Directions
- In a 10″ frying pan, over medium heat, brown garlic in ghee
- Add in spinach and sautee, spreading it out over the bottom of the pan
- Turn broiler on low to warm up
- In a separate bowl, beat eggs, egg whites and milk
- Pour mixture into pan
- Add paprika, salt and pepper
- Cook over medium heat, gently moving the mixture to the edges by rotating the pan so it slowly and evenly cooks throughout (about 10 minutes)
- When almost fully cooked, spread cheese on top of egg mixture
- Move to the oven and broil on low for 2-3 minutes
- With a pot holder, carefully remove pan from the oven
- Place back on stovetop and wrap the handle with a pot holder or towel
- Slice into 2-3in wedges and serve over lettuce or gluten free toast
NB- What we call “Egg Pizza” is known by many as a frittata
