AG Roasted Sweet Potato Bisque

Preheat oven to 400F

(as always cage free, free range, organic, non-GMO ingredients recommended if not specified)

Ingredients

2 large sweet potatoes

1 large white potato

2 garlic cloves, chopped

2 cups chicken or vegetable stock

½ cup non-dairy milk

1 cup water (optional)

1 tbsp coconut oil

½ tsp Himalayan crystal salt

½ tsp ground black pepper

1 tsp turmeric or cinnamon (can also be omitted)

Directions (part 1)

  1. Roast sweet and white potatoes in oven for 45 minutes
  2. Let cool for at least 20 minutes before peeling
  3. Peel potatoes and cut into chunks

Directions (part 2)

  1. In a medium saucepan, saute garlic in coconut oil over medium heat until just browned
  2. Add chunks of sweet and white potatoes and saute an additional minute
  3. Add broth, non-dairy milk, salt, pepper and optional spices
  4. Cover and simmer for 10 minutes
  5. Turn off burner and remove cover
  6. Insert an immersion blender (or transfer to a blender for mixing)
  7. Blend until thick and creamy, slowly adding optional water to desired consistency
  8. Garnish as desired and enjoy!
