VIEW HealthBit LXIX: AG GF Zucchini Bread

AG GF Zucchini Bread
Preheat oven to 350

Ingredients

1 large cage free egg

¼ cup cane sugar

1 large (or 2 small) zucchini, cut into chunks

¼ cup olive oil

1 tsp vanilla extract

2 cups almond (or other gluten free) flour

1 tsp baking soda

¼ tsp baking powder

¼ tsp nutmeg

½ tsp cinnamon

Sprinkle of Himalyan crystal salt

Directions

    1. Lightly coat 9”x 5” loaf pan with olive oil spray
    1. In a Vitamix, other blender or food processor blend egg, sugar, zucchini, olive oil and vanilla extract for 20 seconds or until zucchini is fully chopped
    1. In a large mixing bowl combine other ingredients
    1. Add zucchini mixture to bowl and stir to combine
    1. Spread mixture into loaf pan
    1. Bake 45min or until a toothpick inserted in the center comes out clean
  1. Cool 15 minutes before serving
