VIEW HealthBit LXVII: AG Almond Chocolate Chip Cookie Cake
Preheat the oven to 350F
(NB organic, cage free, fair trade, non-gmo ingredients always recommended)
Ingredients:
1 large egg
¼ cup coconut sugar
2 teaspoons vanilla extract
2 tablespoons olive oil
½ teaspoon baking soda
¼ teaspoon Himalayan crystal (pink) salt
2 cups almond flour
¼ cup water
½ cup semi-sweet morsels
(optional: ¼ cup sliced almonds)
Directions:
Cover cookie sheet with parchment paper and set aside
In a large bowl, whisk the eggs and coconut sugar
Add oil, vanilla extract, baking soda and salt
Add flour one cup at a time
Add water slowly and mix well
Stir in chocolate chips (and optional almond slices)
Place large cookie batter into the center of the pan (form into a shape if so desired)
Bake for 20 minutes
Let sit in the pan for at least 15 minutes before cutting
