VIEW HealthBit LIX: AG Nutty Banana Oat Breakfast Bars
(note: organic, cage free, non-GMO, fair trade products always recommended)
INGREDIENTS:
2 whole eggs
2 egg whites
3 ripe bananas
⅓ cup brown coconut sugar
⅓ cup flaxseed meal
1 cup sunflower seed (“sun”) butter
5 cups oats (preferably gluten free)
½ cup semi-sweet chocolate morsels (optional)
DIRECTIONS:
- Preheat oven to 350 degrees F. Coat a 15x10x1in baking sheet olive oil spray and set aside.
- In a large bowl mash bananas.
- Add eggs/egg whites and mix with banana.
- Mix in coconut sugar and flaxseed meal.
- Add sunbutter and mix well
- Pour in oats 2 cups at a time, coating them well as you mix.
- Add chips if you choose
- Bake 20-25 minutes on center rack (or until edges begin to brown)
- Let cool at least 5 minutes before cutting.
- Cut into bars and store in an airtight container. (Breakfast bars will be slightly chewy, not crispy.)
