VIEW HealthBit LVI: AG Nutty Pumpkin Energy Balls

Ingredients

1½  cups old-fashioned oats (gluten free preferable)

½ cup ground flaxseed or flaxseed meal

½ cup pumpkin puree (preferably organic)

⅓ cup almond butter or sunflower seed butter

⅓ cup pecans or walnuts

¼ cup raw honey (preferably local)

¼ cup mini semi-sweet chocolate chips (preferably dairy free)

1 tbsp cinnamon

 

Directions

  1. Line brownie pan (9×9 or 8×8 pan) with parchment paper for easy clean-up
  2. Combine all ingredients in a bowl
  3. Roll dough into balls about 1 inch in diameter (dough will be sticky)
  4. Place energy balls in pan (makes about 15)
  5. Put pan in freezer for at least 1 hour
  6. Remove pan from freezer and place energy balls in airtight container
  7. Keep energy ball container in freezer when not being consumed
