Ingredients:
- Preheat the oven to 350F
- 1/4 cup coconut oil, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup organic applesauce (or 3 packets organic GoGo Squeez applesauce)
- 2 cups Gluten Free Flour (I prefer almond flour)
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon Himalayan crystal (pink) salt
- 2 teaspoons ground cinnamon (or more to taste)
Directions:
- Grease 9×5 loaf pan with olive or coconut oil spray.
- In a large bowl, whisk the eggs and applesauce.
- Add coconut oil and vanilla extract and continue to whisk.
- Add the the baking soda, baking powder and salt.
- Add the flour in three pours, making sure it’s well-combined each time.
- Add cinnamon (to taste).
- Pour the batter into the prepared loaf pan.
- Bake for 45-60 minutes, checking the loaf every 5 minutes towards the end of baking (mine is often done in 50 minutes).
- Let sit in the pan for at least 15 minutes before cutting. Cut and enjoy.
N.B. I prefer to store it in the fridge and slice pieces for toasting. Once toasted my favorite ways to enjoy it are with a little coconut oil or sunbutter spread on top.
