VIEW HealthBit XXI: AG Gluten Free Applesauce Bread

Ingredients:

  • Preheat the oven to 350F
  • 1/4 cup coconut oil, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup organic applesauce (or 3 packets organic GoGo Squeez applesauce)
  • 2 cups Gluten Free Flour (I prefer almond flour)
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon Himalayan crystal (pink) salt
  • 2 teaspoons ground cinnamon (or more to taste)

Directions:

  1. Grease 9×5 loaf pan with olive or coconut oil spray.
  2. In a large bowl, whisk the eggs and applesauce.
  3. Add coconut oil and vanilla extract and continue to whisk.
  4. Add the the baking soda, baking powder and salt.
  5. Add the flour in three pours, making sure it’s well-combined each time.
  6. Add cinnamon (to taste).
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 45-60 minutes, checking the loaf every 5 minutes towards the end of baking (mine is often done in 50 minutes).
  9. Let sit in the pan for at least 15 minutes before cutting. Cut and enjoy.

N.B. I prefer to store it in the fridge and slice pieces for toasting. Once toasted my favorite ways to enjoy it are with a little coconut oil or sunbutter spread on top.
