VIEW HealthBit XIII: AG GF Banana (Nut) Bread

Ingredients

  • 3 ripe bananas (preferably organic), mashed
  • 1 whole egg and 2 egg whites (preferably cage free), beaten
  • 2 cups gluten free flour (I like almond flour for the added protein)
  • ½ cup coconut sugar
  • ½ tsp Himalayan crystal (pink) salt
  • 1 tsp baking soda
  • ½ tsp guar gum
  • ½ cup walnuts, chopped (optional)

Directions:

  1. Preheat oven to 350 degrees F
  2. In a mixing bowl, mash bananas
  3. Add eggs and beat into the mashed banana
  4. Mix in dry ingredients
  5. Stir well
  6. Add nuts (optional)
  7. Lightly coat a 9”x5” loaf pan with olive or coconut oil spray
  8. Pour in batter
  9. Bake for 1 hour
  10. Let sit at least 15min before cutting.
  11. Cut and Enjoy!

(N.B. It will be moist. I store it in the fridge and toast each piece before I eat it on subsequent days)
