Ingredients
- 3 ripe bananas (preferably organic), mashed
- 1 whole egg and 2 egg whites (preferably cage free), beaten
- 2 cups gluten free flour (I like almond flour for the added protein)
- ½ cup coconut sugar
- ½ tsp Himalayan crystal (pink) salt
- 1 tsp baking soda
- ½ tsp guar gum
- ½ cup walnuts, chopped (optional)
Directions:
- Preheat oven to 350 degrees F
- In a mixing bowl, mash bananas
- Add eggs and beat into the mashed banana
- Mix in dry ingredients
- Stir well
- Add nuts (optional)
- Lightly coat a 9”x5” loaf pan with olive or coconut oil spray
- Pour in batter
- Bake for 1 hour
- Let sit at least 15min before cutting.
- Cut and Enjoy!
(N.B. It will be moist. I store it in the fridge and toast each piece before I eat it on subsequent days)
